Under the white cheese

The spinach white cheese sauce is the thread running through this kitchen. It turns up on dishes in six different sections of the menu, and for a lot of regulars it is the whole reason they stopped reading further.

Slow cooked, dark and worth the wait

The long braises. Order the birria ramen once even if it sounds like it should not exist, because it is beef birria broth with ramen, a soft boiled egg, cilantro, onion and lime, and it is the most surprising thing in the building.
